

Tuna fish sandwiches as a little kid was always a staple lunch item in the house. Even now, they’re an easy lunch to make. I love them on crackers too.
This recipe basically came to me when I was thinking about what to make for lunch. I knew we hadn’t had tuna fish in a while but I wanted to add more ingredients to the usual tuna fish. You always see macaroni salad drenched in mayo at the deli counter and honestly, I just never was a fan of macaroni salad. I always thought it had a weird taste. So then I thought, what if I added macaroni pasta to the tuna fish? That got me thinking of more ingredients to add so I decided that hard-boiled eggs would be a good addition. It’d add nice texture and a mild creaminess from the yolk. All the other ingredients are just from a regular tuna fish sandwich, sans bread. Jason really liked this dish and the below recipe makes a lot so you can bring it for a potluck or have it for lunch the next day or use this as a side dish to any meal. It’s pretty filling too with all the protein its got in it as well as the carbs :)

Drained, still a bit moist. Not super dry. Just get the liquid out of the can.
I am always looking for easy lunch meals for my sweetie and I to pack. We both get tired of the typical sandwich and chips. This salad will be so good stuffed into a tomato or green pepper! mmmmmmm Almost makes we wish it was a work day!!!…..yey no.
