

Are you just as sick of turkey as I am? Just the smell of it makes me want to vom. This morning, as I was putting this sandwich together for lunch, I was repulsed by it. It’s an awesome sandwich for any other day of the year, but after having turkey for basically every meal, I’m so over it! Who knows if I’ll even have it for lunch today. I’ll be surprised if I can even put it down.
Now that I’m done expressing my hatred for turkey this time of year, for those that aren’t sick of turkey yet, this is a great salad to put together in 5 minutes. It’s like a tuna salad but with leftover turkey! You can add in raisins or dried cranberries too. If you’re looking for something easy to make for lunch and you have a bunch of leftover turkey still sitting in the fridge, consider throwing this together for your kid’s lunch and get rid of that turkey fast :)
Turkey Salad
Ingredients:
Turkey leftovers
1/2 cup mayo
6 tbsp. dijon mustard
Pinch of salt
1/2 tbsp. ground pepper
1/2 cup chopped celery
Instructions:
- In a large bowl, combine all the ingredients. Add more ingredients if you need more.
- Make into a sandwich or put atop crackers.
- Keep chilled in an airtight container.


I just love your honesty regarding your repulsion of the turkey. Too funny. You had me laughing out loud. I made a casserole out of our leftover turkey and put it on my blog. My kids love it but needed something creative to get them interested for the third or fourth time!
Great flavors in this. I am a huge fan of chicken and tuna salads. I’m sure this would be a hit too. Great use for leftovers!
