I’m a recent addict of Biscoff spread. It’s to.die.for. If you’ve ever flown Delta and have gotten the in-flight snack cookie, then you’ve had Biscoff. You probably were thinking, “man, these are some awesome cookies,” and wanted to ask for more but you didn’t want to seem like that selfish douche asking for more free snacks before the rest of the plane got theirs. Anyway, the makers of Biscoff decided to top themselves by turning these delicious cookies into spreadable form. Yes, you heard me. The Biscoff spread is made with 57% Biscoff cookies.
What does it taste like? I think it tastes like spreadable gingerbread. It’s hard to describe, just go buy yourself a jar & dip your finger in it, haha. It’s got that buttery gingerbread taste but it’s also smooth and luxurious. Ha, I just used that word on spread. In any case, you’re missing out if you haven’t gotten this. It did take me awhile to find though and I was too stubborn to order it off Amazon cause I wanted it immediately and didn’t want to wait for shipping. Stubborn Julie learned that if she had known how long it was going to take for her to find this said Biscoff spread, by ordering it off Amazon, she would’ve received it way before she actually found it in a store. Ok, done talking in 3rd person. I sometimes tend to do that. If you’re looking for Biscoff spread, I found mine at The Fresh Market, but I’ve heard World Market and Trader Joe’s has it too. I didn’t see it at Whole Foods, but maybe my eyes were deceiving me.
Jason said that these cookies were “so good” and that he can’t wait for me to bring them to his family for Christmas tomorrow. In fact, I personally can’t wait either because I’m going to love seeing their faces. They all mostly fly Delta so I know they know what Biscoff is. I’ll report back later with their reactions. In the meantime, go make these cookies. You will absolutely not regret it one bit AND as further evidence that it’s as awesome as I’m making it sound, my coworker has been quoted again: “I’m having a love affair with this Biscoff cookie.” That’s serious stuff, y’all.
Biscoff White Chocolate Chip Cookies
Yield: 2 dozen cookies
1 1/4 cup all purpose flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 stick unsalted butter, softened
1 cup Biscoff spread
3/4 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 tbsp. milk
1 tsp. vanilla extract
3/4 cup Ghiradelli white chocolate chips
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone mats. Set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, beat the butter and Biscoff spread until creamed together. Then add the sugars and beat until smooth.
- Add the egg and mix until combined. Then add the milk and vanilla extract and mix again until well combined.
- Slowly add the dry ingredients and beat until all is combined. Stir in the white chocolate chips.
- Using a medium sized cookie scoop or a tablespoon, drop dough onto prepared baking sheets.
- Bake for 9-10 minutes. You don’t want to bake them for too long since you want them kind of chewy and soft on the inside.
- Remove from oven and let cool on cookie sheet for 5 minutes before transferring to wire rack to cool completely.
- Store in an airtight container.
