Drunk chicken. Isn’t that funny? Can you picture a chicken walking around sloshed? Well, don’t worry, no chickens were given any crazy amounts of alcohol during the production of this meal. Although, I can’t guarantee you that I didn’t have a few too many sips of this broth prior to actually sitting down with J to eat it. Read: I was kind of tipsy by the end of this meal. But full disclosure: I’m a super light-weight.
Also, I went to a Korean mart instead of a Chinese mart and apparently, Koreans don’t know what goji berries are. Not even if I show them a picture on my phone. They just stared at me and shook their heads and said they don’t know what that is and they don’t have it. I was determined to find it. I KNEW they had to have it because this was a HUGE international mart and they carried the most out of any international store around me. So I turned to my BFF Google and asked, “where would goji berries be in a supermarket?” and my BFF told me it’d sometimes be in the dried tea aisle or herb aisle. So I meander over to the dried tea aisle. Nope, nothing. But then, out of the corner of my eye, I spy this red box. HA! I found it! I grabbed it off the shelf as if someone was going to snatch it from the shelf before me. This is why me and Google are BFF, he helps me with things like this. I ran to the customer service lady and said, “LOOK! I found it. THIS is what a goji berry is.” And then she proceeded to speak in Korean (which mind you, I’m NOT Korean, although 99% of the population thinks I am and all Korean people speak to me in Korean and I stare at them blankly) and then realized what it was in Korean and was like “ohhhhhh.” I guess I should brush up on my Korean in case this happens again with another ingredient, no?
run drive home all excited and giddy that I found this exotic ingredient (not really, it’s really common lol) and I start making this dish. This dish is something my mom made for us, especially my dad, when we were younger. I used to not like it and surprise surprise, I love it now. I think maybe it was cause I didn’t like the taste of alcohol. Not saying I love the taste of alcohol now, but I guess it’s acquired ;) so ANYWAY, I had a dire craving for this dish because it had been cloudy and gloomy out for a few days and it was cold and it didn’t help that my coworker’s wife gave him a bowl of this for lunch one day. I couldn’t resist, I wanted an entire pot of this for myself (and J, I guess hehe) so I did what a girl with cravings would do: make a pot for herself.
Oh my days..it was so good. The Chinese cooking wine is so flavorful with the spicy kick from the ginger and the chicken is so tender and the goji berries give you the cut of sweetness. Since there is alcohol in this, and quite a good amount, it warms you right up! Haha, we were definitely sweating a little by the end of this meal. It’s okay, we shower and don’t smell now. J was sweating, I was sweating and slightly sloshed. Yeah, it was funny :)
Drunk Chicken with Goji Berries and Rice
Yield: 4 servings
1.5 pounds chicken thighs, cut into cubes
1 tbsp. black sesame oil
Salt and pepper
4 cups chicken stock
1 cup water
Lots of ginger, sliced lengthwise
2 tbsp. dried goji berries
1/3 cup Chinese cooking wine
2 cups cooked white rice
- In a stockpot, cook the chicken thighs in the black sesame oil until most are all fully cooked. Season with salt and pepper.
- Add in the chicken stock, water, ginger, goji berries and Chinese cooking wine. Bring to a boil then reduce the heat and let simmer for 20-30 minutes.
- When done, in a large bowl, put a layer of rice at the bottom of the bowl then pour the broth with the ingredients on top.
- Serve hot.
