Trying to be “healthy” after all those sweets the past couple days.

This dressing is to die for. Your new favorite, for sure.

Chop chop, Chicken Kitchen. I hear that at work all the time. I work with several UM (University of Miami) grads and they all ramble on about how great Chicken Kitchen is and their chop chop salads. Chicken Kitchen is only in Miami and Houston so we have no idea what they’re talking about and if it’s really that great. I will actually be down in Miami in April so I’ll have to stop in one of these Chicken Kitchens to test their theory for myself, but until then, I decided to just make a copycat dressing and put it on salad. Apparently it’s the dressing that makes the salad anyway.

The original chop chop salad has saffron rice and I was going to do that with my salad so I bought saffron rice and by the time I finished assembling the salad, I realized I never cooked the saffron rice to even use it. Sooo, it’s just a plain ole salad (I actually saw on their menu you can get it sans saffron rice and it’s just called low-carb, so that’s what mine is hehe) with a delicious dressing — not too bad :)

Jenn from Peas and Crayons posted an entry with “chicken kitchen chop chop” in the title and I immediately clicked on it. Apparently her bf who is from Miami raves about chop chop too so I immediately wrote her and said “all my coworkers are the same way.” Haha, I’m glad she posted her recreation because that meant I could try this dressing before going down to Miami and having the real deal. According to her, the home edition is 10 times better. You’ve got some competition, Chicken Kitchen!

Chicken Kitchen Creamy Curry Salad Dressing

Yield: Dressing is enough for 2 large salads

Ingredients:

6 tbsp. mayo

1 tsp. curry powder, more to taste

1 tsp. white vinegar

Pinch of mustard powder + garlic powder

Salt and pepper, to taste

Instructions:

  1. In a small bowl, combine all the ingredients for the dressing.
  2. For your salad, you can virtually combine whatever you want for it. I had romaine lettuce, grilled chicken, tomatoes, cucumbers, red onions, and shredded cheese. You can make your salad your way and add this dressing on top :)

Yum, this reminds me of a salad dressing I had at Blossom in NYC. I’ve been in South Florida all winter but have never heard of Chicken Kitchen. The next thing I’m doing after leaving this comment is googling the nearest one!

I’ve never even heard of Chicken Kitchen before, but I’m definitely intrigued by this salad dressing! And since I’ve eaten my weight in chocolate the past few days a salad is probably a good idea :)

Raised in Miami Living in Atlanta one of the things I miss most about home is Chicken Kitchen. The curry mustard was all over everything. Trust when I say it is a UM treasure!

I really love this dressing. Unlike most curry dressings that have either yogurt or sour cream – this one can be made with items that are staples in my kitchen. I just made some and put it over left-over-chopped chicken breasts with some apples. It would be great with bay shrimp and avocado and/or papaya too. Thanks.
