PW Wednesday: Ranch Style Chicken

You guys. This is it. This is our LAST PW Wednesday post. This is so sad!! I can’t believe this is it.

I’m so happy to have done this with all the ladies. Seriously, I felt like it was a bonding moment for us whenever we emailed each other “could you find this ingredient?! wait, how are you going to modify feeding an army to feeding a normal family?!” Haha, it was really a lot of fun. I learned a lot and failed sometimes, but in the end, it was definitely worth all the calories and butter!

And speaking of calories and butter, Rachel picked a stupendous dish to see our way out this week! To be honest, I had my doubts. This was a fairly easy dish and it didn’t seem like much flavor was involved. So I’ll admit, at first I was like “meh” but seriously, how could I have done that when BACON slathered in CHEESE was involved? It had to be good.

Looking at the glass half full, I started to prep this dish and right off the bat, the marinade for it smelled AMAZING. Ok, I was sold. I had picked up some smokey chipotle paprika earlier in the day so I thought I’d replace that for the sweet paprika and red pepper flakes the recipe called for. Uh – best decision of my life.

Seriously, I feel that that seasoning MADE the entire dish. So folks – here’s some advice: use some smokey seasoning. It melded so well with the bacon and the marinade. My doubts were washed away with bacon grease. This dish was really good. I’m so glad Rachel chose it as our last dish, it definitely DID NOT disappoint!

Here were my minor modifications:

  • Replaced sweet paprika & red pepper flakes for smokey chipotle paprika
  • Used 3 large chicken breasts and sliced them in half for a total of 6 thinly sliced breasts

It’s going to be so sad not chatting about the recipes anymore! :( It was a good way to go out though. I totally agree with the smoky thing. Even just the smoked paprika I used made the flavors meld together so well. I bet the chipotle you had was even better!

That close up! Oh my gosh. This looks wonderful. But to be honest, what I really want now, instead of chicken, is bacon smothered in cheese. Your pictures just make it look irresistible. :)
