Buffalo Ranch Chicken Pasta


Being sick in the summertime is not fun. I remember when I was younger, being sick in the summer was like a curse. I’d much prefer being sick in the winter because it seems like the norm. Cold weather = sniffly noses, right? Although, obviously, no one wants to ever be sick, but if I had to choose, I would choose curling up in front of the fireplace nursing my cold instead of when the sun is shining outside and I could be by the pool.


I had sinus pressure all weekend and I could’ve sworn my head was going to implode any minute. Instead of taking congestion medicine, I should’ve made myself another batch of this pasta dish. When we ate this a couple weeks ago, our sinuses were wiiiide open, haha

I posted a picture of these on Instagram and a lot of people thought they were fries – which got me craving buffalo fries with ranch dipping sauce. Uh, dangerously awesome.

Sorry, these are no french fries but it’s still a dangerous pasta dish. The heat is addicting. It’s a good hurt. And it’s actually REALLY good cold, as I discovered. The following day when I brought leftovers for lunch to work, I was too lazy to go to the microwave (I know, that’s like ultimate lazy) so I ate it cold. Not too shabby. I could totally see myself whipping up a batch of this for a party, really! It’d be like a cold pasta dish like macaroni salad or something but with buffalo sauce. Yum, right??

Anyway, excuse me while I go shove a couple spoonfuls of this in my mouth to clear my sinuses – natural remedies, ya know? ;)

Buffalo Ranch Chicken Pasta

Yield: 2-3 servings | Prep Time: 10 minutes | Cook Time: 15 minutes

Ingredients:

3 cups penne pasta

5 boneless, skinless chicken tenderloins, cubed

4 stalks of celery, diced

2 carrot stalks, diced

1/2 cup Frank’s hot sauce

1/4 cup ranch dressing

2 tsp. onion powder

Instructions:

  1. In a large pot, bring water to a boil and cook pasta according to the package instructions and drain well when done.
  2. In the meantime, brown your chicken in a large skillet on medium-high heat, 3 minutes on each side.
  3. While the chicken is browning, combine hot sauce, ranch dressing, and onion powder in a small bowl and set aside.
  4. Once chicken is done browning, remove and set aside on a plate. In the same skillet, throw in the celery and carrot and cook until tender. Then place the chicken back in the skillet along with the sauce mixture.
  5. Let sauce simmer for 3-4 minutes then add the pasta to the sauce. Stir until well coated and all is combined.
  6. Serve hot and drizzle more ranch sauce on top.

Yes, being sick in the summer is a pain in the ass! Hope you feel better friend. And this pasta is just lovely. I love that it can be eaten cold – and bringing it to a party is a wonderful idea. It would definitely be the star of the party!

I hate summer colds – seriously, what’s the point of that? IT’s too dang hot to be bundled up in loads of heavy blankies and eating chicken soup… Geez immune system – knock that off would ya?!

This looks like a great dish, no matter what your health! :)

Try one of the gel masks on your sinuses. (Even a damp facecloth in a ziptop freezer bag works in a pinch). Place gel pack in a bowl of boiled water to heat or place the damp facecloth in the MWO for a few seconds, but be careful since it will be very hot. Use a tissue or thin cloth between hot pack and skin so you won’t burn your skin and then lay back and relax for a few minutes. This relieves my sinus pressure better than any pain pill!

How can I make this into a freezer meal?

Cook it and then put it in an airtight container & freeze it. To reheat, pop on stovetop in a skillet or microwave it.

Would using cream of celery woup work instead of using actual celery? I don’t like how strong of a taste celery has, so I like to use cream of celery instead.

I don’t think. I think it’d ruin the pasta. The celery in here is not for the liquid texture (which is what the cream of celery would do), but more for the hearty ingredients. You can just omit the celery if you don’t want to add it in. It won’t change the taste, it’s mostly coming from the buffalo sauce & ranch anyway. :)

Thanks! I made it before I saw your reply so I tried it, and it turned out well. I only used about half a can and it just made the sauce a little creamy. I still just tasted the buffalo and ranch anyway, so maybe i’ll try celery next time. More healthy that way. :)

WOW…chicken wing delight! Thanks for sharing. Best dish I’ve come across in awhile. Little spicy for my kiddos who usually devour wings. More leftovers for my husband and me!
