YOU GUYS. Did you hear Friends is coming back for a comeback season?! (Ok, so I’m now hearing this is a rumor but it was still exciting when I read this!!!) I watched Friends off and on the entire time it was on air and I’m SO excited to hear this. *squeals* I hope they don’t ruin it, though & I hope that all the same cast members are back. Can you just hear your significant other groaning?? Oh, the episodes they’ll have to endure with us ;)

Have you heard about these crazy WordPress sites getting attacked? They’re starting to freak me out! Every time I log into my WordPress dashboard and if it’s a teensy bit slow, I start to freak out and think I’m being hacked. This whole thing makes me feel so uneasy but at the same time, it’s ironic that just last week, I signed up for Sucuri Security and I hope it was money well spent. Protect my site from those hackers! It’s beyond me why people do these types of things. I mean, what kind of “reward” do they get? You know what else is ironic? Going into a sunglasses store and picking up a pair of sunglasses to try on and falling in love with them. And then you realize it’s $480 so you continue to try on other pairs of sunglasses with no luck because you’ve already fallen in love and you can’t get the first ones you tried on out of your head. Nothing compares to it, so you’re shit out of luck and leave sulking because there’s no way you can justify $480 for a pair of sunglasses. No way! It always happens to me – the first thing I try on is always an exorbitant amount of money and of course it always looks SO GOOD. Why?? The shopping gods have it against me.

This past weekend, Jason & I went beer & wine shopping for our wedding with my parents. Now, Jason & I probably have beer & wine to last us 4 years just hanging out in our basement right now. That, or we look like alcoholics or we’re about to build a bar in our basement. We had so many people come up to us to ask, “what’s your address?,” “what time should we show up?,” and “can I come over?” – funny, but obnoxious after the first 10 people.

I know that it’s pretty much Spring now and not a lot of people think about soup for warm weather, but I had this sitting in my backlog and I kept delaying posting it because I had all these other recipes I wanted to share first. I figured I might as well share it now when the evenings are still a bit cool because I know when summer time rolls around, the last thing I’ll be thinking about is a large pot of hot soup. So, now or never for this corn chowder!

I LOVE sweet corn. It’s probably one of my favorite vegetables and I can eat ear after ear after ear of corn in the summer time. Corn anything makes me swoon. This corn chowder is a cinch to whip up since you put everything in a crockpot and let it slowly cook and develop flavor. It’s wonderful!

Crockpot Corn Chowder

This corn chowder is a cinch to whip up since you put everything in a crockpot and let it slowly cook and develop flavor!
Prep Time: 5 minutes
Cook Time: 8 hours
Total Time: 8 hours 5 minutes
Servings: 8

Equipment

Ingredients 

  • 6 potatoes, peeled & diced
  • 14.75 ounce (418 ml) can cream of corn
  • 15.25 ounce (432 ml) can whole kernel corn
  • 2 cups (473 ml) low sodium chicken broth
  • 8 ounce (227 g) diced pancetta
  • 1 large onion, diced
  • 2 teaspoon salt
  • 2 teaspoon black pepper
  • ¼ cup (57 g) unsalted butter
  • 2 cups (473 ml) half and half

Instructions 

  • Place potatoes, cream of corn, corn kernels, chicken broth, pancetta, and onion into the insert of your crockpot, stir to mix well.
  • Cook on low for 7 hours, or until potatoes are nice and fork tender.
  • Before serving, add in the butter and stir in the half and half.
  • Cook for an additional 30 minutes then serve!

  1. Great recipe! First time reader here! I’m not sure if you’ve answered this in other posts since I’m still navigating your amazing blog. What size crockpot do you use? I have a 2-qt one and often have difficulty finding recipes that fit that size. Do you have any suggestions of how to adjust recipes for a smaller crockpot?

    1. Hi Kathy! I believe mine is a 4 quart crockpot. I’m not positive though because my mom gave it to me and she doesn’t have the box anymore. If you want to adjust recipes for a smaller crockpot, just cut the recipe in half.

      1. I cooked this for 4.5 hours and it turned out great! I might use only 1 tsp of pepper next time because I felt it was a little too hot (I’m a baby when it comes to spicy food) other than that, it was absolutely delicious! :)

  3. First off, let me begin by saying that I do not consider myself to be a good cook. I’m usually pretty “meh” about this whole having to prepare food-stuff. Why can’t the food fairy come and make everything for me? (Or better yet, clean up afterward….)

    For some reason though, I stumbled upon your blog and after reading a few posts, I’ve just been so excited to try my hand at so many things!
    I absolutely loooooove corn in all its forms (Corn chips! corn niblits! corn on the cob with lots of butter! popcorn! omnomnom!) so I HAD to give this a whirl.

    I’ve got mine sitting in my crockpot now, and I can hardly wait for the next 7 hours to pass. XD

    Anyway, whether it turns out to be absolutely amazing, or awful, or merely “meh”, I just wanted to drop a comment anyway. It’s been a while since I’ve been excited to make something in the kitchen, so thanks for providing that little kick in the butt of inspiration. <3

  4. I love corn chowder, I make it all the time in the winter! I’ve never made it in the crock pot, though. I think I need to try that, it sounds much easier!

  5. Friends reunion?! I’d totally be up for that. Now as far as recipe goes…this soup looks delish! I love sweet corn too and I must try this asap. It’s not too hot out yet in my opinion. :)
