Can you believe it’s already almost time for flu shots and flu clinics? I actually got my flu shot on Tuesday. My employer was offering them way early this year for the entire month. Last year, they ran out of supplies, so maybe that’s why they’re getting an earlier start? I totally think it’s way early but if they’re offering it, why not? I get one every year just cause I fear if I don’t, I’ll come down with a strong case of the flu. It’s probably just me, but you know how Murphy’s Law goes ;) It’s also crazy how within 30 minutes of getting the flu shot, my arm is already super sore! It was so sore by the time I got home from work that I couldn’t take my shirt off, lol! Do you get the flu shot?

I think this past week we had our last stretch of summer. It was so humid from Monday to Thursday and up in the 90s. We had storms roll through last night and it completely cooled everything down and now it’s only going to be in the mid-70s the rest of the weekend and into next week. I already see leaves changing color! There’s so many fallen leaves in my neighborhood. They’re a little anxious to fall off those branches, aren’t they? ;)

So, we decided that this Fall we aren’t going to paint our bedrooms after all. We were going to repaint the bedrooms to be a light grey, but then we realized we’d rather invest that money into working on the man-cave/den in the basement instead. We’re planning on getting a chaise couch down there, a rug, and a tv to hang above the fireplace. Yes, there’s a fireplace down there and we haven’t even used it yet. This will be our second winter in this house and I’m determined to use it this winter. It’s such a bummer they put the fireplace in the basement and not the main living area (where we are the most). But, I’m sure once we complete the area, we’ll be down there all winter :) I can’t wait to finally be all warm and cozy in the wintertime.

You’ll want to make these ground lamb and hummus pita pizzas asap. It’s basically a Greek party in your mouth. The spices make the lamb so flavorful and all the flavors work so perfectly together. We couldn’t stop eating this. I think we each ate four a piece. Not exactly the portion control I was going for ;)

Ground Lamb and Hummus Pita Pizzas

These are a great Greek spin on traditional pizzas! This lighter version utilizes ground lamb, pitas, hummus, and tomatoes. 
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4

Ingredients 

  • 6 ounces (170 g) ground lamb
  • 1 teaspoon olive oil
  • 1 ½ cups (240 g) onion, chopped
  • 1 tablespoon garlic, minced
  • 1 ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ½ cup (118 ml) water
  • ½ cup (75 g) diced tomatoes, canned and drained
  • 1 ½ tablespoon fresh lemon juice
  • 2 6 inch pitas, cut in half
  • ½ cup (68 g) garlic hummus
  • Handful chopped parsley
  • 1 tablespoon pine nuts, toasted

Instructions 

  • Preheat boiler to high.
  • Heat a skillet over medium-high heat and add the lamb to the pan. Cook for 3 minutes, or until browned, breaking apart the lamb into crumbles with your spatula/wooden spoon. Remove lamb from skillet.
  • Add oil to the same pan and sauté onion for 2-3 minutes then stir in garlic, cumin, dried oregano, salt, and ground cinnamon. Stir to mix well then stir in the 1/2 cup of water and diced tomatoes. Bring to a simmer and then stir in the cooked lamb. Cover, reduce heat, and simmer for 5 minutes. Stir in the lemon juice.
  • Split the two pitas into 2 rounds. Place pita rounds on a baking sheet and broil 1 minute on each side, or until crisp. Make sure you watch it carefully!
  • Spread 2 tbsp. of hummus on each round, top with ground lamb mixture and garnish with parsley and pine nuts.

  4. I am required to get the flu shot every year because I am a nurse. Two years ago, I actually got Influenza B (likely from a patient) one month after I received the vaccine. I would not wish that on anyone!!!

  5. Ouuu we just got the reminder for flu shot – can’t believe it’s that time of the year again. I definitely need to throw a pita pizzas party now. I’ve never tried cooking with lamb and you just convinced me to try this recipe. I’m sure this will be a hit since the hubs is a big fan of hummus.
