We all know eating a juicy peach over the sink as the juice runs down your arms is the ultimate peachy summer tradition. I’ve got another way to celebrate summer — with these easy to make peach crumble bars! Fall will be here before we know it, and all of those lovely fresh peaches will disappear from the produce section. I plan on enjoying them before that time comes… in the form of baked goods! These buttery crumble bars are perfect for using up all those peaches in the very best way.

There are two delicious layers of dough here. There’s one that serves as the base and another that’s crumbled all over the top and baked to golden brown perfection! The middle of this dessert bar recipe is the real star of the show, though. Fresh, juicy, sweet peaches are enhanced with a simple handful of pantry staples like lemon juice and sugar to create the very best sunshine-y peach goodness!

For the dough:

  • All-purpose flour
  • White granulated sugar
  • Baking powder
  • Salt
  • Unsalted butter
  • Egg

For the filling:

  • Peaches
  • Lemon juice
  • White granulated sugar

How To Make Peach Crumble Bars

Here is a general overview of the steps involved to make peach bars. Be sure to scroll to the bottom of this post for the full recipe.

Prepare. Preheat your oven to 375°F and line the bottom of a 9×13″ pan with parchment paper.

Make the dough. Whisk together the flour, sugar, powder, and salt. Cut the butter into the dough with a pastry blender until it looks like pea-sized crumbs. Add the egg and continue to cut the egg and butter into the flour until a crumbly dough forms.

Create the first layer. Press half the dough into the bottom of the prepared pan. Set the rest of the dough aside.

Make the peach filling. Toss the peaches, lemon juice, and sugar together. In a separate bowl, whisk together flour, salt, cinnamon, and nutmeg. Pour that on top of the peaches and toss together until just incorporated.

Assemble the remaining layers. Pour the peach mixture on top of the dough in the pan. Crumble the remaining dough on top of the peaches.

Bake. Bake for 45 minutes, or until top is golden brown.

Enjoy! Cool completely before cutting into squares.

Recipe Tips, Substitutions, and Variations

Here are just a few ways that you can make your peach crumble bars peachy perfect!

  • Use fresh peaches. Avoid using canned or frozen peaches if you can help it! Fresh peaches will lend the best flavor and consistency to the filling. If you do have to use frozen peaches, make sure to let them fully thaw to room temperature prior to using.
  • Get that beautiful golden brown top. I had to use the broiler for 5 minutes after the 45 minutes of baking to get the top to the brown color I wanted. You can choose to do the same, but just watch it carefully!
  • Your dough should be crumbly. When you make the dough, you’ll notice that it’s crumbly and the consistency may resemble pea-sized crumbs. That’s great! Your dough should look exactly like that. Once you’ve reached that consistency, no need to keep cutting into it with your pastry blender.

Storage and Reheating Instructions

In an airtight container at room temperature, these bars will stay fresh for about 2-3 days. You can keep them fresher in the fridge for about 4-5 days if you’d like. While I think they’re tasty at room temperature or even chilled, you can pop a peach crumble bar in the microwave for just about 5-10 seconds for a warmer treat. If you go the warmer route, I suggest enjoying your bar with a scoop of vanilla ice cream!

What To Serve With Peach Crumble Bars

These peach bars are pretty delightful themselves but if you are feeling extra indulgent, a big scoop of Peach and Toasted Almond Ice Cream would compliment this peach dessert very well! Or, try some different flavors and use Biscoff Ice Cream to give this dessert a twist. You can go classic with Strawberry Ice Cream as well for a fruity variation.

Peach Crumble Bars

These peach crumble bars are filled with fresh, sweet, peaches. You don't want to miss out on this peachy goodness! 
Prep Time: 30 minutes
Cook Time: 45 minutes
Total Time: 1 hour 15 minutes
Servings: 12 bars

Ingredients 

For the dough:

  • 3 cups (375 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (227 g) unsalted butter, cold, cut into 1-inch cubes, 2 sticks
  • 1 egg, lightly beaten

For the filling:

  • 5 cups (770 g) peaches, peeled, sliced, and diced, about 6 peaches
  • 2 tablespoon lemon juice
  • ¾ cup (150 g) granulated sugar
  • ½ cup (63 g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions 

  • Preheat oven to 375 °F (191 °C). Line the bottom of a 9×13" pan with parchment paper. Set aside.
  • In a medium bowl whisk together flour, sugar, powder, and salt. Using a pastry blender, cut the butter into the dough until it looks like pea-sized crumbs. Add the egg and continue to cut the egg and butter into the flour. The dough should be crumbly.
  • Press half the dough into the bottom of the 9×13″ pan and set the rest of the dough aside.
  • In a large bowl gently toss peaches, lemon juice, and sugar together. In a small bowl, whisk together flour, salt, cinnamon, and nutmeg, then pour on top of the peaches and toss together until just incorporated.
  • Pour the peach mixture on top of the flour mixture in the 9×13″ pan. Crumble the remaining dough on top of the peach mixture.
  • Bake for 45 minutes, or until top is golden brown. I had to use the broiler for 5 minutes after the 45 minutes of baking to get the top to the brown color I wanted. You can choose to do the same, but just watch it carefully!
  • Cool completely then cut into squares.
  • Wrap the pan tightly with foil then keep in the fridge for up to a week.
