I used to NOT like watermelon juice at all. I remember clearly that every year I went back to Taiwan, we would go to the night markets and one of the most popular juices that would be sold there was fresh watermelon juice and my cousins would always get a cup and I would vehemently say “no, thank you.”

My parents make it at home too and whenever I visit them in the summer, they always offer me a glass. Again, I would always say no.

Then I figured out why I thought the whole idea of watermelon juice was gross.

When I went to LA last year and someone from our group ordered fresh watermelon juice and it came out ice cold — it tasted completely different. Since last year, I had been waiting and waiting until summertime so I could make watermelon juice. This was back in October when I was in LA and I asked Jason in January whether or not he thought I could find watermelon in stores. Lol, um not quite. Another reason why I wish I lived on the west coast – fresh produce year-round!

So, I had to wait an entire season to make this watermelon mint lime juice recipe! And now I can’t stop with the watermelon recipes.

This watermelon mint lime juice is so refreshing especially ice cold. I don’t suggest serving this lukewarm as I really don’t think the flavors shine through. Watermelon is meant to be had chilled because well; it’s watermelon! You associate that with a cool refreshing feeling. Watermelon is a summer fruit for a reason. It cools you down when it’s scorching outside!

The combination of watermelon, mint, and lime in this flavorful summer drink is everything you need! Plus — naturally sweetened :)

Watermelon Mint Lime Juice

Thie watermelon mint lime juice is an instant summer cool down refresher!

Equipment

Ingredients 

  • 5-6 cups (760 g) cubed seedless watermelon
  • Juice of 2 limes
  • Handful of mint leaves

Instructions 

  • Place everything in a blender and blend until smooth.
  • If desired, strain juice over fine mesh sieve and large bowl. Press through until just juice is in the bowl and the pulp remains in the sieve.
  • Pour into jars and store in the refrigerator for up to five days.

  2. This is the easiest and most refreshing summertime drink!! I made this to go with dinner tonight and the family loves it and will definitely keep it in rotation. I even mixed with some organic lemonade and it paired perfectly. My 8 year old made this last summer in camp and requested that I make some since watermelons are now in the grocery store.
