Did you guys buy anything on Prime Day? I actually bought two things that were a Prime deal steal and one thing that wasn’t. The best part of it all was that I got free same-day shipping so I got everything I ordered last night, haha. I was really hoping for a Roomba because I’m officially an adult and I desire cleaning electronics more than I do makeup and frilly things. I didn’t like the one they had as the deal so I’ll just wait until next year when we move to our new house! I think Costco regularly has a deal on them.

ANYWAY, I’d be curious to hear if you got anything neat or if you were just way too overwhelmed with the deals and closed your computer and went to watch tv instead.

Carbs are my best friend and they should be yours too. This basic bacon and brussels sprouts pasta carbonara is not only a mouthful of alliteration but it’s also a mouthful of amazingness that you will put in your mouth for dinner. I jazzed up the classic pasta carbonara with these fun lasagna-type noodles. It gives so much more eye appeal and texture.

Omg, you know what word I was just about to use? Mouthfeel.

I’m kind of grossed out with myself.

But apparently mouthfeel IS a real thing and a real descriptor in the culinary world. I think that word is worse than ‘moist.’

Irregardless, I think this would be a fabulous meal for any night of the week. I love that the egg makes everything so creamy and if you’re a little skeeved out that maybe the egg might not fully cook, feel free to throw this back on the stove top for a little longer and toss just to make sure. We didn’t need to because the pasta was super hot but just a tip in case!

Basic Bacon and Brussels Sprouts Pasta Carbonara

Basic bacon and brussels sprouts pasta carbonara is a take on the classic creamy pasta. It’s still got all the flavor but just more ingredients to love!

Cook Time: 20 minutes
Total Time: 40 minutes
Servings: 4 servings

Ingredients 

  • 9 ounces (255 g) mafaldine pasta, or similar
  • 8 slices bacon, cooked extra crispy
  • 1 cup (88 g) thinly sliced brussels sprouts
  • 2 cloves of garlic, minced
  • 1 cup (100 g) parmesan
  • 2 eggs + 1 egg yolk
  • Salt and pepper, to taste

Instructions 

  • Bring a large pot of water to a boil and season with salt. Add pasta to the water and cook according to the instructions on the package. Drain when finished.
  • Meanwhile, cook your bacon in a large skillet. Once bacon is done cooking, place on a large plate lined with paper towels to drain then chop into tiny pieces. Reserve half the bacon fat in the skillet.
  • Sauté brussels sprouts and garlic in the bacon fat over medium-high heat until softened and fragrant.
  • Add the pasta to the skillet and toss to incorporate. Add parmesan then add the eggs and egg yolk to the pasta. Remove from heat and toss everything together to cook the eggs and melt the cheese. Sprinkle with the bacon pieces and toss again.
  • Season with salt and pepper, to taste.

    1. Unfortunately, no. There are many reasons as to why I don’t post nutritional information on my recipes, one of which is that I’m not a registered dietician or nutritionist so for me to give any sort of nutritional information would be incorrect and inaccurate. There are also many differing factors when it comes to nutritional information and since I do not have the knowledge in this, I do not feel comfortable posting this sort of information. If you must have this information, there are many calculators out there (free and paid) that can help you with calculations. A quick Google search would pull up some of these calculators, but again, I’m not endorsing them as I do not know how accurate they may be.
