This past weekend had been in the works for months. As you all probably know, I am obsessed with my spin classes. Ever since I first got introduced to it, I have been hooked. I even stopped doing Pure Barre to dedicate my time and health to spin classes purely because I wanted more cardio incorporated into my life rather than toning.

Ever since Zengo Cycle opened in Mosaic District, I have been going to them. I got this crazy idea in my head that it would be super fun to have a cookbook launch party there. I wanted to invite all my friends and readers join me in my excitement over cycling classes. I wanted give the ones who have never taken a spin class to get the chance themselves to experience a signature cycling class and see why I’m pretty much obsessed. I also wanted this to be the place I launched my cookbook, Dinner for Two, and the place to celebrate my accomplishment with my closest friends and sweet fans. I reached out to Zengo Mosaic in July, just to get conversation going, and to my surprise, they were totally on board! This event was one of the best things I’ve ever planned and these energy ball bites were a part of the launch too!

At first, I was debating whether or not to make something from the cookbook to bring to the book signing and cycling party. I wanted to but at the same time, I knew no one would want to eat anything heavy after they just spent 50 minutes sweating and burning all the calories. I didn’t want to show up empty-handed in case people expected food, so I thought these energy ball bites were the perfect compromise. They aren’t in the cookbook but these are a great post or pre-workout snack. Naturally sweetened and has everything good for you in it! They’re pretty filling too if you have a few. The best part? They take 10 minutes to make!

I’m happy to say they were a HIT and there were zero balls left at the end of the event. People kept coming back for more and one friend of mine had seven! Haha, I’m sure he can attest to how tasty they were!

These were the photos from the book signing that we were able to capture. I am still reeling from this event. I cannot stop smiling every time I think about it! The instructor, Kelsey, is my favorite at Zengo Cycle and I’m SO thrilled she was able to teach this ride for me!! LOVE HER!!

My favorite kitchen utensil is this spatula. The makers of it is a company called GIR. I’m sure you’ve heard of them. I pledged an amount when they had their Kickstarter – way before they were an actual business – and have been a huge supporter of them ever since. I’ve replaced all my spatulas in the kitchen with their Ultimate Spatula (I have over seven different colors, haha) and I have a couple skinny and mini’s. They’re seriously the BEST spatulas EVER! I use them in all my cooking & baking.

I reached out to them to see if they would want to provide the attendees each a spatula as swag so they can cook in their kitchen with something that I love. I just want people to see why I love these spatulas so much! GIR graciously agreed to help sponsor the event with fifty of their pink and purple ultimate spatulas and they were a hit as well. So many people came up to me to share how excited they were to cook with these and how much they loved the fun colors. Thank you, GIR!!

Energy Ball Bites

These energy ball bites are naturally sweetened and filled with good-for-you ingredients that will give you that extra boost pre or post workout! 
Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 50

Ingredients 

  • 1 cup (81 g) of rolled oats
  • cup (78 g) chopped walnuts
  • 28 ounces (794 g) of pitted dates
  • cup (85 g) cashew butter, or any other nut butter you like
  • 3 tablespoons chia seeds

Instructions 

  • In the bowl of a large food processor, process the rolled oats until very finely ground. Not to flour consistency but almost there with a little bit of larger flakes left.
  • Add the walnuts, dates, cashew butter, and chia seeds to the bowl then process until everything is chopped up finely. You’ll know when it’s done when you can grab a handful, squeeze it, and it holds its shape and stays together.
  • Scoop out the mixture using a medium cookie scoop or 1 1/2 tablespoons and roll into balls.
  • Store in an airtight container in room temperature for up to one week. Alternatively, you can put these in the fridge or freezer. They will last longer in the fridge and even longer in the freezer.
