Let’s take a coffee break from my Iceland travel series to talk about this layered toasted coconut cashew iced latte.
Just the name of this drink alone makes me want to have it every single morning. What is better than toasted coconut and cashew milk with a double shot of espresso? I’d have to say it’s pretty hard to contend the epicness of this latte. And you know my love for cashew milk and how obsessed I was with it when I discovered it last year when I did my paleo challenge. Of course Silk® had to go and outdo themselves and add in my favorite flavor of all time in their new Nutchello™ beverage: toasted coconut!
Silk®’s brand new Nutchello™ beverage comes in three flavors: caramel almond & cashew, dark chocolate & walnut, and my favorite, toasted coconut & cashew. Honestly, staring at this display at the grocery store was hard. I had to decide between those three flavors. Ultimately, I went with the toasted coconut one because coconut is pretty much one of my favorite flavors of all time in anything sweet. Everything about this latte made me happy. The foam, the flavor, and the espresso sitting on top of the milk. I love the layered effect but then when you stir it all together? It’s like magic!

- 2/3 cup Silk® Nutchello™ in Toasted Coconut and Cashews
- 2 shots of espresso
- Pour Silk® Nutchello™ into a mug or glass with ice. Pour espresso over top. Stir and enjoy!
Feel free to make foam with regular milk and spoon it on top.
