Paleo Challenge: Day 10

From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 20: Day 10

Notes: anyone still following along with these daily posts? am i boring you? lol

Breakfast: three turkey sausage links, one pork sausage patty, final two egg cups, one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)

Lunch: chipotle chicken salad w/guac (yes, you can make chipotle paleo! it’s all about knowing what to eat!)

Dinner: slow cooker pot roast with mashed cauliflower & veggies

Snacks: paleo beef jerky, almonds, pineapples

Drinks: H2O

Exercise: rest day

Thoughts: the more i do paleo, the more i’m realizing how easy it is to eat for paleo. when my coworker suggested chipotle for lunch, i was going to say no until i realized i could get a salad with chicken, tomatoes, and guac. all paleo-friendly ingredients! seriously, the longer you eat paleo, everything will start to come together and it’ll be easy to figure it out. in the beginning, i didn’t believe that it’d become second nature but now i’m starting to see it! it’s really interesting that i still don’t have cravings for carbs (bread, pasta) or sweets. i think one of the reasons why i don’t have a craving for sweets is what i read about them but also because this past weekend, when jason was eating paleo with me, he decided to have cereal on sunday morning and he was totally grossed out and said how sugary it was. it was just honey bunches of oats but it goes to show how much hidden sugar even in cereal there is. i have a feeling once i have an unnatural sweet treat after this paleo challenge, i’ll gag at how sickening it is. my spin instructor was telling me yesterday how she had a chocolate bar after her whole30 challenge and she was like it was disgusting, haha

I agree with the above! I have contemplated going Paleo several times but never really bit the bullet. These posts have shown me that it can be done - even with a busy schedule. I appreciate you sharing your meals AND how you are feeling :)
