From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 22: Day 12
Notes: a big challenge day since we had to eat out twice today with friends and family!
Breakfast: pork sausage egg scramble, cinnamon paleo english muffins w/smashed avocado, one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)
Lunch: zaxby’s cobb salad w/no blue cheese or dressing (basically just ate the toppings and some leaves)
Dinner: mahi mahi, salmon, shrimp, and string beans
Snacks: almonds, paleo beef jerky, cashew butter
Drinks: H2O and pineapple coconut water
Exercise: none again..gotta back on track, i know, but really hard this weekend!
Thoughts: i don’t think i’d call today the hardest day but meal-wise, it was the hardest by far. we ate out for lunch and dinner mainly because we were with friends and family. dinner was the absolute killer. everyone ordered popcorn shrimp and calamari for the table. i couldn’t have it. then dinner was fine because there were paleo options but I was also “that diner.” I literally asked them, “so, in your crab cakes, are there breadcrumbs in it?” and “so tell me about your herb butter baste.” Hahaha, I think the waitress thought i was nuts. omg and then DESSERT. everyone ordered either a key lime pie, blueberry cheesecake, or salted caramel brownie a la mode. holy balls. i was seriously craving a bite hardcore. but i’m in it to win it in this paleo challenge so i resisted. after this paleo challenge, i would likely take 1 big bite and that’s it. i really want to keep a low-carb and low-sugar lifestyle after this paleo challenge!
