From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 24: Day 14
Notes: another day-trip to and from involved a lot of eating out and challenging meals. finally home though so I can hopefully do better tomorrow :)
Breakfast: scrambled eggs, two sausage patties, bacon, fruit, a large coffee with almond milk
Lunch: roasted turkey salad with avocado, bacon, tomatoes, cucumbers and balsamic vinegar and olive oil
Dinner: roasted chicken with veggies (low light, didn’t photograph well – trust me, not sure you wanted to see it haha)
Snacks: almonds, paleo beef jerky, cashew butter, carrots, dates
Exercise: walked 3 miles!
Thoughts: driving/being on the road and paleo is hard but i survived :) great lessons learned and definitely helps to know what to eat! i’m going to probably do a post on what stuff you can bring on road trips to help you if you’re on a paleo challenge or just eating paleo in general but you have to travel.
