From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 31: Day 21
Breakfast: one coconut cashew pancake, cup of black coffee with a splash of cashew milk (didn’t want to eat a lot before working out)
Lunch: mixed berry and peach smoothie
Dinner: smoked brisket and caramelized onions and a side of guac
Snacks: watermelon, almonds
Exercise: 50-minute [solidcore] workout that kicked my ass
Thoughts: we went to a friend’s house for a party. it was a smoked brisket and sous vide brisket party. basically seeing which meat rendered better with what cooking technique. i literally could only eat the brisket plain with caramelized onions. every thing everyone else brought had sugar in it (which if you think about it, it’s gross how much sugar is in EVERYTHING). slaw, cookies, fruit tarts, popsicles, potato salad, corn, compound butter, parker house rolls. yup..none of those paleo-friendly. haha i bet people thought i was weird just eating meat and caramelized onions. also, [solidcore] kicked my ass and i’m already sore from today’s workout. that usually does not happen, lol
