From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

June 2: Day 23
Notes: so sore.
Breakfast: chicken sausage, mixed berry and peach smoothie, cup of black coffee with a splash of cashew milk
Lunch: Powersupply beef bolognese with spaghetti squash
Dinner: kitchen sink hash – you guys, i’m blogging this soon. it was so freaking good. i wasn’t expecting it’d turn out the way it did and i was so happy when it did cause i grabbed my camera and took photos for the blog, haha
Snacks: single-serving wholly guacamole cup, almonds
Drinks: H2O and pineapple coconut water
Exercise: i don’t think i’ll be able to workout for like 4 days at this point (still sore)
Thoughts: i’m still so so sore, haha. this is brutal. but, it kinda makes me want to go back and take another class. between cycling and [solidcore], i feel like i would have a really tone and healthy body. we’ll see. it’s pretty expensive but i do love how i feel after. well, maybe not THIS sore.
