From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

June 4: Day 25
Breakfast: two chicken sausages, cup of black coffee with a splash of cashew milk
Lunch: Powersupply Moroccan meatballs w/cabbage slaw and roasted red pepper sauce
Dinner: almond butter, dates, and mixed berry smoothie
Snacks: grapes, pineapple, apple, guacamole, coconut cream pie larabar
Exercise: 50-minute HIIT spin class
Thoughts: i can’t believe it’s day 25!!! i kind of don’t know what i’m going to do with myself next Thursday when it’s the first day off paleo. i mean, i’m going to try my damn hardest to eat low-carb and low-sugar but i can’t guarantee you i won’t eat some form of rice lol…i think the sugar thing is going to be easier for me though cause i have a hatred towards sugar right now after reading all about it. OH and i can’t wait to do a final weigh-in and a measurement..woop woop! hoping for some good results to share :) oh and i already started writing my recap post so you guys can read ALL about this entire paleo challenge – how i felt, energy levels, struggles, digestion, etc. – I seriously can’t wait haha
