Paleo Challenge: Day 29

  • From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

    June 8: Day 29

    Notes: ahhh i totally counted 30 days wrong and I thought the challenge was going to end on Wednesday the 10th but it’s actually TOMORROW. Nice surprise but I’m going to be sad to not post these daily (ok jk..this was like a ton of work haha) but I’m excited to continue on my healthy clean eating lifestyle beyond the challenge!! this means my recap post will be wednesday!!! so look out for it :)

    Breakfast: two chicken sausage patties, cup of black coffee with splash of cashew milk

    Lunch: roti chicken salad

    Dinner: curry meatball and kale stew (yes, this will definitely be blogged – it was so damn good!!)

    Snacks: dates with cashew butter

    Drinks: H2O, grapefruit juice

    Exercise: [solidcore] – yes, i went back!

    Thoughts: i wonder how sore i’m going to be lol

    Thank you so much for posting about your journey. I love the process of cooking and get a little burned out fixing the same things and am looking forward to adding some variety. I feel like I use the same techniques over and over: saute protein, stream/roast veggies, eat. Not that it isn’t good, and I use seasonings, fats, and herbs to make tasty meals. I just start taking short cuts and get it robot mode. I enjoy cooking, and I’m excited to try some new recipes. Thank you!

      I totally get how you feel! I was like that too in the beginning and then I just started to get creative and start throwing random things into a pot. Sometimes stuff I’ve never even tried before. I guess they don’t call this a challenge for nothing! Haha
