Paleo Challenge: Day 3

From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 13: Day 3

Notes: was really freaking excited to eat these cinnamon paleo english muffins this morning, haha

Breakfast: two-minute paleo english muffin with 1/2 of an avocado (smashed), one egg cup muffin, one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)

Lunch: kale salad with apples, cucumbers, tomatoes, olives, hard boiled egg, and grilled chicken. Dijon vinaigrette.

Dinner: paleo orange chicken with roasted broccoli

Snacks: half of paleo english muffin with cashew butter, apple, and the other 1/2 of my avocado

Drinks: H2O and grapefruit juice

Exercise: rest day but did 30 minutes of walking!

Thoughts: I’m kind of sick of being in the kitchen so much and I feel like thinking of the next meal and then prepping it is so much work. However, I do think it’s because I actually have to think about the food instead of just throwing it in a pot and calling it a day. I have to think if it’s paleo-friendly or not. I’m sure this will change within the 30 days but right now, I feel like I live in my kitchen and that I’m constantly prepping for the next day’s meal.

My mom has been eating a primarily paleo diet for over a year now. She works full-time and often works late... you may hit on this in later posts (I'm just catching up on this series now!), but she batch preps everything on Sundays so that she can just grab and eat during the week. She uses her slow cooker for a lot of meat recipes for dinners. Hope that helps! :)

ok looking at your food I just realized that I had a boring and sad day in terms of eating, that kale salad that you had sounds delicious, and looks very vibrant and healthy!

I think I missed something. How do you make the Paleo English muffin? My son and daughter-in-law have made Palio their lifestyle, for health reasons, and they won't eat bread when they visit me. I am interested in learning how to make this. Thanks very much. Love your blog, Julie!

Keep it up Julie!! I'm watching along and you and Gina are inspiring me to make a few handy changes ,too!
