From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 17: Day 7
Breakfast: mixed berry and banana smoothie, two egg cups, and one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)
Lunch: stuffed mushroom cups, recipe will be posted in a couple weeks!
Dinner: asian-style salmon with collard greens
Snacks: pineapples, handful of almonds, banana chia seed bite
Exercise: 50-minute HIIT cycling class
Thoughts: I think today might be the first day that I actually am feeling the paleo effects. I woke up this morning from one of the deepest sleeps I’ve ever had. I seriously felt like I had been drugged or given 3 benadryls. It was so amazing. In cycling class today, it was odd I had so much energy. At 10am, I usually don’t have the kind of energy I had today. I felt like I was the hulk or something. I was able to keep up the entire class and I just blasted through all the sprints. I was in beast mode. Felt good! I spent another full day in the kitchen. Seriously, I’m EXHAUSTED. So many dishes and so just so much cooking. I think I might’ve found a solution to my lunches though but I’ll keep you posted. It’s similar to Blue Apron but it’s for people w/an active lifestyle and it’s paleo.
