From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

May 18: Day 8
Notes: back to leftovers and pre-prepped boring meals lol
Breakfast: mixed berry and banana smoothie, one egg cup, one hard-boiled egg, and one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)
Lunch: shredded pork and avocado salad with Dijon shallot vinaigrette (I’m seriously obsessed with this dressing. 2 teaspoons Dijon mustard, splash of apple cider vinegar, 2 teaspoons honey, 1/4 cup olive oil, 1/4 cup water, 1/2 shallot, finely diced. Whisk all together or shake in a mason jar and store in fridge), strawberries and pineapples.
Dinner: leftover pumpkin coconut curry (seriously, this thing tastes even better after sitting in the fridge for a couple days, you gotta make it!)
Snacks: handful of almonds, banana chia seed bites
Exercise: abs and thigh/butt workout on Fitness Blender
Thoughts: smoothies are incredibly hard to make without waking up your other half. i’m tempted to bring the blender into the garage tomorrow morning so i don’t disrupt the husband. let’s talk about mason jar salads. the concept is there but the execution? massive fail. there is no fork that is as tall as those big mason jars. i love the idea of them but there is no point if i’m going to have bring a separate bowl for it, ya know? it’s just more dishes. might as well just bring it in a big tupperware. i thought i was being so trendy with my lunch today until i went to eat it. i ended up with salad dressing all over my knuckles from digging into the jar for salad. #fail
