Paleo Challenge: Day 9

    From May 11 – June 10, I’m doing a paleo challenge with Gina. I decided to journal this as something to look back on and also for others to follow along and to use as reference in case they want to take on this challenge in the future. I’ll link to recipes (either mine that I developed on this journey or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted. My purpose of doing this isn’t to lose weight. It’s changing up my eating habits to see how it works for my body. I’m not a health professional so I cannot offer you any advice. There are numerous resources out there for paleo. Do your research before committing.

    May 19: Day 9

    Notes: do you know how hard it is to find beef jerky that is paleo-friendly? i was craving it last week and when i went to whole foods, every beef jerky or turkey jerky packet i picked up had hidden sugars in it! gina told me about steve’s paleo goods paleo jerky and i ordered four packs. they’re so good. i haven’t eaten beef jerky in AGES! i bought southern bbq, vermont honey maple, and two packets of the regular flavor.


    Breakfast: cinnamon paleo english muffin w/kerrygold butter and two chicken and apple sausages, one cup of cold-brew coffee w/unsweetened coconut milk (from the carton, not the canned ones)


    Lunch: salmon salad (had leftover salmon from a previous night) with Dijon shallot vinaigrette (I’m seriously obsessed with this dressing. 2 teaspoons Dijon mustard, splash of apple cider vinegar, 2 teaspoons honey, 1/4 cup olive oil, 1/4 cup water, 1/2 shallot, finely diced. Whisk all together or shake in a mason jar and store in fridge), pineapples.

    Snacks: paleo beef jerky, dates, almonds

    Drinks: H2O


    Pre-workout: berry smoothie

    Exercise: 50-minute HIIT cycling class

    Thoughts: tuesdays are my least favorite days. super busy with basically no time for prep the next day. i hate that cycling is at 730. by the time i get home it’s 9 and i still have to eat dinner. if i want to get anything done, it needs to be before class but i just want to relax. oh the struggle!
