It’s weird and sad that the Olympics are over. I can’t believe how fast two weeks goes. Now we have to wait another 2 years for another Olympics to get excited about. I must admit, though, that I never really got the chance to sit down and watch a lot of the competitions, however, last night, I was able to and they just so happened to be interview Ryan Lochte. Uh, is he even real? Seriously. I can’t get over how hot he is. I know every girl & their mother has obsessed over him the past two weeks but now it’s my turn. The interviewer asked him about relationships (ya know, since his mom said Ryan was a one-night stand kinda guy) and whether or not he’s been burned by a girl and whether or not he wants to settle down anytime soon. He said he had been burned by a few girls (I bet those girls are regretting that now, ha!) and that he does want to get married soon and settle down.

Ryan, if you’re reading this, I think you’re a hottie & I make killer food (ya know, to feed that Olympian body of yours) so I’d love to be your wife.


Oh stop it. Of course I’m kidding. He’s just eye candy and Jason understands!

I made these parfaits last week because I still somehow have not consumed all the peaches in my fridge. I thought this would be a nice healthy alternative to snacking and this makes for a pretty filling breakfast! It’ll take you 3 simple ingredients and less than 5 minutes to have this delicious and refreshing parfait. Mix it up with various seasonal fruits too!

Peach Parfaits

A healthy and easy breakfast or snack!
Prep Time: 5 minutes
Total Time: 5 minutes
Servings: 2 parfaits

Ingredients 

  • 12 ounce (340 g) vanilla greek yogurt
  • 1 large peach, diced
  • 1 cup (122 g) granola, I used Bob’s Red Mill honey oat granola

Instructions 

  • Using a spoon, layer bottom of the trifle glass with a few spoonfuls of yogurt.
  • Then layer on some diced peaches.
  • Then granola.
  • Then top with more yogurt.
  • Repeat until desired amount of layers or until the trifle glasses are full.
  • Eat immediately. They don’t keep well as the granola will get soggy.
