    Oh hey, it’s July! And July 4th is on Thursday! More than half a year is already gone and the next thing you know, we’ll be putting on winter coats. I swear warm weather is just too short around here. I feel like cold weather lingers longer than warm does.

    This past Saturday, we went to a friend’s birthday party and it was a themed one. The theme was “college.” You basically had to wear what you wore in college and bring what you used to drink in college. OH MAN, that was hilarious. I mean, boxed wine, anyone? Watered down beer? ARBOR MIST?! Hahaha, so funny. Granted, college was only 4 years ago for me so I think it would’ve been funner to do it maybe 10 years down the line, but still, I had a blast dressing up in a super short jean skirt, legging underneath, and UGGS. That was THE college girl outfit when I was in college. Epitome of one. We had people show up with popped collars and sorority/fraternity letters. I seriously want to know what was going through our minds in college :)

    Since we’re on the topic of ice cream and college – I have a funny story for y’all. I minored in computer information systems and that required us taking a database class. We had two major projects at the end of the semester and you got to do it with a partner. Me and my friend paired up and we were trying to figure out the back-end to this database one evening when a sudden craving for ice cream hit. We decided to go to ColdStone – that was bad decision number 1. Bad decision number 2 was each of us ordering the largest size they had AND we had them put it in a waffle cone. Bad decision number 3 was eating it ALL. Yes, we each ate all of ours. Let me just say, after we wrapped up the project for the night, I went back to my apartment and threw it all up. It was probably one of the worst ideas ever and looking back on it, I still gag every time I think about ColdStone and their ice cream. It’s just so rich!

    Strawberry Ice Cream

    Strawberry ice cream is the perfect way to use up all those strawberries you may have lying around!
    Prep Time: 5 mins
    Total Time: 5 mins
    Servings (adjustable, but please note that results, timing, and cookware may vary when adjusting servings): 4 -6

    Ingredients

    • 2 cups heavy cream
    • 7 oz sweetened condensed milk
    • 1 cup hulled strawberries, sliced into 1/2-inch pieces

    Instructions

    • Freeze the bowl of your ice cream maker for 24 hours.
    • In a large bowl, whisk together cream and condensed milk.
    • Pour the contents into the bowl of the ice cream maker then freeze the ice cream in the bowl of the ice cream maker according to manufacturer's instructions.
    • Halfway through the churning process, add in the strawberries.
    • Once the ice cream is done churning, mine only took about 20 minutes, transfer to a freezer-safe bowl and freeze in the freezer at least 4 hours.

    Ahah, that`s actually a pretty cool party theme! I like how college is a theme when you`re outside of college, but in college there are themes like safari or neon. LOL. This ice cream looks delicious!
