A thunderstorm was rolling through when I was leaving the house in the evening to go to my barre class. Jason was 20 minutes from home so he would’ve been home right as the thunderstorm was getting strong. We have been leaving Winston out of his crate when we go out (he does great!) and he gets full roam of the house. When I got to barre, I got a text from Jason, “where’s the dog?” What? I’m so confused. I left him at home. Where else could he be?

I immediately called Jason and he was super panicked. He was looking all over for Winston. I was like, “there’s no way he’s anywhere else. He can’t be outside because all the doors are closed and locked. I saw movement on the Nest cam and he walked into the master bathroom, he’s gotta be there.” We were on the phone for what seemed like forever. Jason looked in every bathroom, every tub, looked under every bed, every couch. Couldn’t find Winston AT ALL. And Winston isn’t the type of dog to not coming running to you when you get home. He’s a lover and needs human interaction. He never leaves our side when we are home and when we do get home from being out, he comes trotting over to us and is super happy to see us.

Of course, at this rate, with Jason not being able to find Winston at all in the house, I immediately thought someone broke in and stole him. Haha, that’s the only logical explanation!

The last place Jason checked was my walk-in closet…and little Winston had locked himself in there, haha

The walk-in closet door shuts itself for some reason. It’s probably something with the hinges. We’re pretty sure he wandered in there and the door closed (but didn’t completely close shut) and he tried to get out but pushed the door shut instead therefore locking him in the closet!! It’s weird he didn’t bark when Jason kept calling his name. Thankfully he’s okay! Goodness, that was so scary even though I knew there was no other place he could be! Phew.

It’s a little crazy that 4th of July is next Monday but to get in on the celebration, I made you this triple berry brioche French toast bake! Festive and full of summer freshness. You will love it ESPECIALLY with the brioche bread. I mean, I’m usually a challah kind of girl but man, when I saw the loaf of brioche at this local bakery, I had to get it.

If I could choose a favorite bread, hands down would be brioche or challah. We are super snobby and we go to Whole Foods and buy brioche hamburger buns because nothing else compares (I know I totally sound like Ina Garten right now), so having this buttery brioche bread throughout this French toast bake is exactly what your mornings need!

Triple Berry Brioche French Toast Bake

This triple berry brioche French toast bake is a breakfast or brunch dish that your overnight crew will love! Fresh berries are layered throughout the rich and buttery brioche bread. Your family and friends will love you!

Equipment

Ingredients 

  • 1 loaf of brioche bread, cubed into 1.5″ squares
  • 3 cups (710 ml) whole milk
  • 8 large eggs
  • 2 teaspoons vanilla bean paste
  • Zest of one large orange, about 1 tablespoon
  • 1 ½ cups (216 g) diced fresh strawberries
  • 1 ½ cups (222 g) fresh blueberries
  • 1 ½ cups (180 g) fresh raspberries
  • 2 tablespoons granulated sugar
  • Powdered sugar, for topping

Instructions 

  • Lightly grease a 9×13-inch oven-safe casserole dish and add half of the cubed brioche to the dish.
  • In a large measuring cup, whisk together milk, eggs, vanilla bean paste, and orange zest.
  • Add half the berries on top of the brioche that’s already in the casserole dish then add the remaining brioche cubes on top.
  • Carefully pour the milk/egg mixture all over the bread mixture, gently pressing down on the bread with the back of a wooden spoon as you pour.
  • If prepping ahead of time, now you would cover the dish with foil and place in the fridge overnight and bake in the morning following the directions below.
  • If making to serve immediately, preheat oven to 375 °F (191 °C) while you let the bread soak in the liquid for 30 minutes. Sprinkle granulated sugar lightly over the top of the bread mixture.
  • Bake for 1 hour or until mixture is warmed through and most liquid has cooked off.
  • Remove from oven and top with remaining berries and dust with powdered sugar.

Notes

Place casserole dish on top of a baking sheet when pouring the milk/egg mixture on top in case you spill or it overflows. It’s also easier to place into the oven if you have a baking sheet underneath. It can also catch overflow, if you experience any! No one likes scrubbing the oven :)

  2. 1st let me say animals &2yr old have alot in common. I’ve been given flak about that for 30yrs now, but its true. If u think about it, the only difference is 2yrs old as they grow they learn logic& reasoning skills & as much as I love all kinds of animals no matter how much they learn they wont ever develop that. I loved this and so did my grandkids, if u have any more recipes for berries I’d like to see & try
