Katsu curry combines two Japanese dishes: chicken (or pork) katsu and beef curry. With crispy chicken, tender beef, vegetables, and white rice, this meal will fill you right up!

Let's start with the curry first. In a skillet over medium-high heat, add olive oil and brown the chuck roast cubes.
Sauté the onion, then cook the potatoes, carrots, and celery for a few minutes. Next, add in enough beef stock to cover everything.
Bring everything to a boil, then add the curry cubes and browned beef. Then, turn the heat down and let the curry simmer for 30-40 minutes.
Time to start the chicken katsu! Begin by pounding the chicken to an even thickness in a plastic bag. Then, prepare the breading station in 3 bowls.
Coat your chicken in flour, dip it in the egg mixture, and finally cover it in breadcrumbs, Fry it on both sides for 3-4 minutes, and repeat until all the chicken is fried.
Start with a bed of white rice. Then, ladle a serving of curry on top of the rice, and arrange the chicken katsu (sliced into thin strips) around the curry.
