Add all of the dry ingredients and mix until combined, then mix in the butter.
Beat in the vanilla and egg on medium speed until a dough has formed.
Roll the dough until it’s about 1/4 inch thick. Then let it chill in the fridge for at least 30 minutes.
Cut out the cookies and bake for 12-15 minutes. Let them fully cool before piping the dulce de leche onto the bottom of each one.
Top with another cookie. Use your hands to press the shredded coconut all around the sides.
Let the cookies chill in the fridge until the caramel has hardened. Then serve!
