Leave the pork to marinate in 2 tablespoons of soy sauce for 15 minutes.
Whisk together the remaining 2 tablespoons of soy sauce, hoisin sauce, rice vinegar, and cornstarch.
Pour the beaten eggs into a pan and cook until mostly firm. Flip and cook until set. Slice into strips.
Sauté the pork in some vegetable oil over medium heat until browned and cooked through. Remove from the pan.
Add more oil to the pan and sauté the garlic and ginger for 1 minute.
