This easy Taco Casserole is basically a deconstructed taco baked in a casserole dish. The best part is topping it with your favorite fixings, like avocado, tomatoes, and green onions. Yum!
First sauté the onions until soft, then stir in the ground beef and cook until browned.
Add in the bell peppers, corn, tomatoes, and seasonings to the ground beef. Cook until the veggies have softened.
In a 9" x 13" casserole dish, add your first layer of refried beans.
Next, add a layer of the ground beef mixture.
Next, add a layer of crushed tortilla chips.
Then finish with a layer of shredded cheese on top.
Bake your taco casserole until the cheese is melted and just slightly browned.
Serve with your desired toppings and enjoy!
