Three cup chicken (三杯雞), or san bei ji, is a Taiwanese dish made from chicken cooked with a sauce that combines equal parts soy sauce, sesame oil, and rice wine.

You'll start by halving your chicken drumsticks.
Next, sauté smashed garlic and fresh ginger in a skillet with sesame oil.
Add the chicken to the pan. Stir in soy sauce, cooking wine, water, and basil leaves.
Cover and cook, turning the chicken every 10 minutes until dark brown.
Serve the finished three cup chicken over rice, drizzled with extra sauce.
