I used to be a breakfast hater. I never knew what to make for breakfast and thought it was so much effort that early in the morning. More than 90% of the time, I’d skip breakfast or eat something completely unsatisfying and I’d be hungry two hours later.
These days, I’m a breakfast LOVER and it’s usually the biggest meal for me. I believe that you have to fuel your body correctly from the start of the day in order to set the rest of your day right.
There’s a reason why it’s named breakfast, right?
I love planning what to make for breakfast these days. I pull everything I want out of the fridge in the mornings and start compiling my meal from there. I also learned to not eat at the crack of dawn. No one wants to eat at 6am. Your brain is barely awake. The only thing I want at 6am is my second cup of coffee ;)
So, with a little creativity and time for my brain and appetite to wake up, I have learned to love the first meal of the day and I’m here to inspire you in the mornings to love it too!
Pictured in this post are all plates of my REAL breakfast that I made and ate the past several weeks. I’m eyeing these blueberry peanut butter pancakes to make soon. They are great for the freezer too!
There are a lot of similarities but there are also a lot of different ways to have the same thing over and over again. I haven’t gotten sick of these combinations so I hope these will help spark some creative juice in you for breakfast.
I typically have some sort of greens and mushrooms for breakfast. It’s usually either baby spinach or kale. Then I sometimes top with salsa or sriracha if I scramble it with eggs.
I almost always have some sort of toast with either butter and jam, a nut butter, or avocado.
For protein, I almost always have some sort of chicken sausage, egg, egg whites, ground turkey, or bacon.
Some days, I even make an omelette with 1 egg and 1/4 cup of egg whites.

Looks very good. I love breakfast and always have. In my really young days, foot loops, sugar smacks, sugar pops, danish go rounds. Ha!! Way older now, I love oatmeal with a banana and walnuts. I also like peanut butter, toast, walnuts, avocado toast with fruit. Tonight I am making the eggplant parmigiana. OOPSIE! I didn't have parmigiana. But, it will be tasty. I will let you know!!

So I'm a breakfast girl, and I love to mix it up. Multigrain waffles and fresh blueberries and chicken sausage; Steamed spinach scrambled with eggs and feta and chicken sausage. Today I had 10 grain hot cereal with blueberries and a sprinkle of granola. And this post and these photos made me drool. Thanks for the inspiration!
