Another great way to use cauliflower gnocchi in a quick meal for the weeknight hustle! This chicken chorizo cauliflower gnocchi skillet comes together in less than 30 minutes!
In a large skillet over medium-high heat, brown and break up sausage. Once mostly cooked through, add onion and red bell pepper. Cook until softened, about 5-7 minutes.
Add the frozen cauliflower gnocchi to the skillet then add 1/4 cup of water. Cover and cook until gnocchi is softened.
Remove from heat and add the baby spinach. Toss. The residual heat will wilt the spinach. Season with salt and pepper, to taste.
