Instructions
In the bowl of a large food processor, process the rolled oats until very finely ground. Not to flour consistency but almost there with a little bit of larger flakes left.
Add the walnuts, dates, cashew butter, and chia seeds to the bowl then process until everything is chopped up finely. You'll know when it's done when you can grab a handful, squeeze it, and it holds its shape and stays together.
Scoop out the mixture using a medium cookie scoop or 1 1/2 tablespoons and roll into balls.
Store in an airtight container in room temperature for up to one week. Alternatively, you can put these in the fridge or freezer. They will last longer in the fridge and even longer in the freezer.
