Grilled Peaches with Burrata, Mint, and Balsamic Drizzle

Ingredients

large ripe freestone peaches
cut in half and pitted
Burrata cheese
Balsamic vinegar or balsamic glaze
Sprigs of mint
Instructions
Turn your outdoor grill on high (you can also do this on an indoor grill if you don't have access to an outdoor grill).
Spray grill with a bit of cooking spray then place peach halves on the grill, flesh-side down.
Grill peaches until grill marks appear to your desired degree (some like it darker, some like it lighter).
Remove peaches and set aside to cool - just enough to touch but still warm.
Once cooled, sliced peaches and arrange them neatly on a platter.
Break burrata into pieces and dollop all over the tops of the peach. Drizzle balsamic on top and top with mint sprigs.
Serve warm.
