In a small bowl, mix together all ingredients for the chicken seasoning. It will look like it's not enough but trust me, it is!
In the tray of the chicken thighs (or a large bowl), pour the seasoning mix the chicken and massage it throughout the chicken on both sides thoroughly. Cover and let marinate overnight or at least 6 hours.
While the chicken is marinating, you could prep/make the rice and sweet potatoes and set aside for later.
Once it has been done marinating, heat up a large skillet over high heat then add a bit of avocado oil (or whatever cooking oil you like).
When the oil is hot, add the chicken thighs and brown on both sides then reduce heat and cook chicken until cooked through.
Once chicken is cooked through, let cool on cutting board then dice into cubes.
To assemble the wraps, warm up the tortillas in the microwave then lay one tortilla flat on work surface. Spread a little bit of herbed tahini sauce on the bottom of the tortilla.
Start to layer with rice, sweet potato, and chicken. Be as generous as you want.
Roll the wraps tightly and push filling into the wrap as you roll. It's okay if some falls out.
To hold together, you can use a toothpick or just place seam side down on cutting board. Slice in half then wrap with foil or similar and repeat until all has been rolled!
