Whether you're serving these homemade waffles for a Saturday morning with the family or a Sunday ladies brunch, be prepared to receive LOTS of love for these waffles!
4tablespoonsgranulated sugar(optional, see blog post or notes for more details)
2teaspoonsbaking powder
½cup(90g)chocolate chips
Oilto grease waffle iron
Toppings:
Maple syrup or honey
Blueberries
Butter
Instructions
In a large bowl, mashed bananas with a fork. Pour in oil, milk and apple cider vinegar. Stir.
In another bowl, add in oats, flour, sugar (if using), baking powder and chocolate chips. Combine until a batter forms. You can also fold in some blueberries at this point as well.
Let rest for 5 minutes.
In the meantime, preheat the waffle iron. Once ready, spray with non-stick oil or brush with oil.
Pour ½ cup batter, more depending on the size of your waffle iron. Just make sure to leave a bit space at the edge so that the batter doesn't run outside. Follow manufacturer instructions for the cooking time. Mine took 5 minutes to cook. Waffle should be lightly crispy on the outside and soft inside.
Remove carefully with a fork or tongs and place on a serving plate but don’t stack at this point or it will lose the crispiness. Repeat the same step until no more batter is left.
Serve with your favorite toppings.
Notes
The batter is already naturally sweetened with the banana. Granulated sugar, brown sugar or coconut sugar can be added if you desire something sweeter but between the naturally sweet bananas and chocolate chips, you likely do not need to add more sugar.
