Garlic Oil with Lemon & Shrimp Pasta is a super quick weeknight meal - it's ready in 15 minutes! Juicy shrimp and pasta are tossed with garlic oil and lemon juice, and served with parmesan cheese!
Bring a pot of water to boil for the pasta. Add a handful of salt and olive oil before dropping in the pasta. This will season the pasta while cooking.
Meanwhile, in a small skillet, add the olive oil and sliced garlic on the stove on medium-high until you can smell the garlic. I cooked mine until the garlic was just brown. You don't want to burn the garlic otherwise the oil will have a bitter taste. Set aside.
Cut your lemons in half and squeeze out the juices in a cup, discarding the seeds.
Peel and de-vein your shrimp, if needed. You can either boil your shrimp in the pasta water right before the pasta is done cooking, or cook the shrimp in a skillet to get a nice sear.
Drain your pasta and shrimp once it's done and put them in a large bowl.
Pour the garlic infused olive oil (you may keep the garlic in if you want, but I remove them) and lemon juice over the pasta. Toss until pasta is covered and add some salt and pepper for seasoning.
You can top with some freshly grated parmesan cheese or fresh basil and serve with a baguette.
