Basic bacon and brussels sprouts pasta carbonara is a take on the classic creamy pasta. It's still got all the flavor but just more ingredients to love!
Bring a large pot of water to a boil and season with salt. Add pasta to the water and cook according to the instructions on the package. Drain when finished.
Meanwhile, cook your bacon in a large skillet. Once bacon is done cooking, place on a large plate lined with paper towels to drain then chop into tiny pieces. Reserve half the bacon fat in the skillet.
Sauté brussels sprouts and garlic in the bacon fat over medium-high heat until softened and fragrant.
Add the pasta to the skillet and toss to incorporate. Add parmesan then add the eggs and egg yolk to the pasta. Remove from heat and toss everything together to cook the eggs and melt the cheese. Sprinkle with the bacon pieces and toss again.
