Crockpot Corn Chowder

This corn chowder is a cinch to whip up since you put everything in a crockpot and let it slowly cook and develop flavor!

Ingredients

  • 6 potatoes, peeled & diced
  • 1: 14.75 oz can cream of corn
  • 1: 15.25 oz can whole kernel corn
  • 2 cups low sodium chicken broth
  • 8 oz diced pancetta
  • 1 large onion, diced
  • 2 tsp salt
  • 2 tsp black pepper
  • 1/4 cup unsalted butter
  • 2 cups half and half

Instructions

  • Place potatoes, cream of corn, corn kernels, chicken broth, pancetta, and onion into the insert of your crockpot, stir to mix well.
  • Cook on low for 7 hours, or until potatoes are nice and fork tender.
  • Before serving, add in the butter and stir in the half and half.
  • Cook for an additional 30 minutes then serve!
