In a large bowl, using your hands or a spoon, gently mix ground beef, onion, eggs, breadcrumbs, garlic, milk, Italian seasoning, parsley, salt, pepper, and ketchup. Do not overmix or it will create a tough loaf!
1 pound 85/15 ground beef, 1 small onion, 1 egg, 1 cup plain breadcrumbs, 3 cloves garlic, ½ cup milk, 1 teaspoon Italian seasoning, 1 teaspoon parsley, 1 teaspoon kosher salt, 1 teapoon ground black pepper, 2 tablespoons ketchup
Shape this mixture into two equal loaves. Place both loaves, side by side, into the basket of your air fryer.
Air fry at 350 °F (177 °C) for 20 minutes, or until a thermometer inserted into the center comes out 165 °F (74 °C)
While the meatloaf is cooking, in a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce.
¼ cup sugar-free ketchup, 2 tablespoons brown sugar, 1 ½ teaspoons Worcestershire sauce
When there is 5 minutes left of cooking, pull out the air fryer basket and using a pastry brush, generously brush on the meatloaf glaze. Insert the air fryer basket back into the air fryer to finish cooking.
Allow meatloaf to cool for 10 minutes then remove from the air fryer basket and slice into thick slices on a cutting board.
