Instructions
Preheat oven to 350 °F (177 °C).
In a 9x13-inch oven-safe casserole dish, add oil then toss tomatoes, red onion, and olives with Italian seasoning, salt, and ground black pepper.
1 Tablespoon olive oil, 10 ounces cherry or grape tomatoes, ½ small red onion, ½ cup pitted Kalamata olives, ½ tablespoon Italian seasoning, 1 teaspoon Kosher salt, ½ teaspoon ground black pepper
Make two wells then add cheese pucks in each well.

Bake for 30 minutes.
In the meantime, bring a pot of water to a boil and cook the pasta until desired doneness. Drain and set aside.
2 cups uncooked mezze rotini or fusilli pasta
Once the tomato mixture is done, remove from oven and carefully burst the tomatoes with the back of a fork. Stir the mixture all together, mixing the cheese throughout.
Add the chicken and spinach on top and stir until the spinach is cooked through (the residual heat from the tomato mixture will cook it and warm through the chicken).
9 ounces pre-cooked chicken breast strips, 2 cups baby spinach
Add the pasta then stir again to incorporate well.
Garnish with fresh chopped basil and season with additional salt and pepper, to taste.
