Chicken Chorizo Cauliflower Gnocchi Skillet
Another great way to use cauliflower gnocchi in a quick meal for the weeknight hustle! This chicken chorizo cauliflower gnocchi skillet comes together in less than 30 minutes!

Ingredients
- 1 pound (454 g) fresh chicken chorizo sausage
- ½ yellow onion diced
- 1 large red bell pepper diced
- 12 ounce (340 g) bag frozen cauliflower gnocchi
- ¼ cup (59 ml) water
- 1 cup (30 g) baby spinach
- Salt and pepper to taste
Instructions
- In a large skillet over medium-high heat, brown and break up sausage. Once mostly cooked through, add onion and red bell pepper. Cook until softened, about 5-7 minutes.1 pound fresh chicken chorizo sausage, 1/2 yellow onion, 1 large red bell pepper
- Add the frozen cauliflower gnocchi to the skillet then add 1/4 cup of water. Cover and cook until gnocchi is softened.12 ounce bag frozen cauliflower gnocchi, 1/4 cup water
- Remove from heat and add the baby spinach. Toss. The residual heat will wilt the spinach. Season with salt and pepper, to taste.1 cup baby spinach, Salt and pepper
