Instructions
In a large bowl, add all the ingredients and then toss to incorporate.
1 pound Roma tomatoes, 15 ounce can black-eyed peas, 15 ounce can black beans, 1 cup frozen sweet corn, 1/2 cup diced red onion, 1/2 cup diced green bell pepper, 1/2 cup diced red bell pepper, 1/2 cup olive oil, 2 tablespoons granulated sugar, 1/3 cup white vinegar, 1 teaspoon chili powder, 1 teaspoon kosher salt, Chopped parsley for topping
To serve chilled, put covered in fridge for 3-4 hours. This can be served at room temperature, too.
