Say hello to your new favorite almond butter! This cinnamon spiced version is like Christmas in a jar but also so good topped on yogurt, granola, fruit, or added into a smoothie!
Spread almonds out on lined baking tray. Toast almonds for 13 minutes or until they’ve turned a deeper brown color. Take out of oven and allow to cool for 5 minutes.
Put almonds into food processor or high-powered blender. Blend until smooth and creamy, stopping to scrape down the edges every 5 minutes or so. Depending on the power of your food processor/ blender, it could take anywhere from 5 to 20 minutes to achieve a smooth texture.
Add maple syrup, vanilla, cinnamon and salt to almond butter and blend for a few more minutes. When you first blend in these ingredients, the mixture will go clumpy. Keep blending until it eventually goes smooth again.
Allow to cool, then pour into a jar and store at room temperature for up to two weeks.
