Sausage Gnocchi Soup
This sausage gnocchi soup is hearty, comforting, and perfect for fall and winter. Plus, it's healthy, quick, and easy to make.

Ingredients
- 2 tablespoons (28 g) butter (can replace with oil)
- 1 yellow onion diced
- 1 pound (454 g) pork sausage (spicy Italian is best)
- 4 garlic cloves minced
- ½ teaspoon fennel seeds
- ½ teaspoon red pepper flakes
- 2 teaspoons Italian seasoning
- ¾ teaspoon salt
- 15 ounces (425 g) canned diced tomatoes
- 4 cups (946 ml) chicken broth
- 1 pound (454 g) gnocchi
- 2 cups (134 g) chopped kale (you can also use spinach)
- Parmesan cheese for serving
Instructions
- Heat butter in a large soup pot over medium heat. Add the onion, and cook until soft. Then add the sausage and cook until browned.2 tablespoons butter, 1 yellow onion, 1 pound pork sausage

- Add in diced tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.15 ounces canned diced tomatoes, 4 cups chicken broth
- Add in the gnocchi and kale and continue cooking for another 5-7 minutes. Remove from heat and serve with parmesan cheese.1 pound gnocchi, 2 cups chopped kale
