Slow Cooker Turkey and Wild Rice Stew

A warm, hearty, and comforting stew to use your leftover Thanksgiving turkey or any other meat you may have extra of!

Equipment

Ingredients 

  • 4 cups (946 ml) turkey stock
  • 2 teaspoons turkey base
  • 3 large carrots diced
  • ½ onion chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • ½ cup (80 g) wild rice blend
  • ¼ cup (43 g) quinoa
  • 2 ½ cups (249 g) shredded cooked turkey
  • 2 cups (60 g) loosely packed baby spinach leaves

Instructions

  • In the insert of a slow cooker, add turkey stock, turkey base, carrots, onion, spices, wild rice blend, and quinoa.
    4 cups turkey stock, 2 teaspoons turkey base, 3 large carrots, 1/2 onion, 1 teaspoon dried oregano, 1 teaspoon dried thyme, Salt and pepper, 1/2 cup wild rice blend, 1/4 cup quinoa
  • Cook on low for 5 hours or high for 3 hours. When finished cooking, stir in turkey and spinach leaves and wilt spinach with residual heat from the stew.
    2 1/2 cups shredded cooked turkey, 2 cups loosely packed baby spinach leaves
  • Serve warm.
