Apple Cranberry Crisp

Sweet apples and tart cranberries are topped with a buttery crumble of crunchy oats and pecans.

Equipment

Ingredients 

For fruit filling:

  • 4 cups (500 g) apples peeled and diced
  • 3 cups (300 g) cranberries frozen or fresh
  • ¼ cup (81 g) maple syrup
  • ¼ cup (55 g) brown sugar
  • ¼ cup (59 ml) water
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons cinnamon

For topping:

  • 1 ½ cups (122 g) oats old fashioned or rolled
  • ⅔ cup (66 g) pecans chopped
  • ¼ cup (55 g) brown sugar
  • ¼ cup (31 g) flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup (107 g) maple syrup
  • ¼ cup (57 g) butter melted
  • 2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 °F (177 °C)
  • Add the apples, cranberries, maple syrup, brown sugar, water, lemon juice, corn starch, and cinnamon to a large mixing bowl. Mix until evenly combined.
    4 cups apples, 3 cups cranberries, 1/4 cup maple syrup, 1/4 cup brown sugar, 1/4 cup water, 2 tablespoons lemon juice, 2 tablespoons cornstarch, 1 1/2 teaspoons cinnamon
  • Transfer to a 9 or 10" cast iron skillet or 9x13” baking dish. 
  • Bake on the center rack of the oven uncovered for 30 minutes.
  • Meanwhile, stir together all of the dry ingredients for the topping. Add in wet ingredients and stir until well combined.
    1 1/2 cups oats, 2/3 cup pecans, 1/4 cup brown sugar, 1/4 cup flour, 1 teaspoon cinnamon, 1/2 teaspoon salt, 1/3 cup maple syrup, 1/4 cup butter, 2 teaspoon vanilla extract
  • After 30 minutes, remove the crisp from the oven, stir, and top evenly with crumble topping. Return to the oven and bake for another 25-30 minutes or until the topping is lightly browned and crispy.
  • Remove from the oven and let cool for a few minutes before serving.
